Honestly..I hardly ever eat tree nuts (too expensive!) so they certainly don't have to a part of your diet at all. Google the vegetarian food pyramid when you decide to take the plunge (fish is not a vegetarian food and many cheeses contain slaughter by products)

If you eat a bean with a rice, that will give you protein and amino acids. (preferably organic and unprocessed)

And if you consume organic flaxseed grounds, that will give you the 'good fat' that you find in fats. If you can eat seeds, that is.

Eat lots of whole wheat foods and foods made from brown rice. Hummus, avocados, and potatoes are really good for you too. And make sure to eat lots of vegetables for iron and fruits for fiber.
Also, please, please, PLEASE do not call yourself a vegetarian while you eat fish. You are a pescatarian. Once you cut fish out of your diet, then by all means call yourself a vegetarian. But while you are still eating flesh, please do not.
